  1. Grill your sirloin first

    • Salt generously (ideally 1–24 hrs ahead)

    • Grill hot for crust

    • Pull about 5–10Β°F before your target temp

  2. Rest 5 minutes

    • Get a cast iron pan ripping hot

  3. Add:

    • 1–2 tbsp of your truffle butter

    • Optional: small splash of beef stock or a little Worcestershire

    • Optional: cracked black pepper

  4. Put steak in and baste for 30–60 seconds

    • Spoon the foaming butter over the top

    • Don’t cook the butter too long or the truffle aroma fades

Finish with:

  • Flaky salt

  • Fresh cracked pepper
