Grill your sirloin first
Salt generously (ideally 1β24 hrs ahead)
Grill hot for crust
Pull about 5β10Β°F before your target temp
Rest 5 minutes
Get a cast iron pan ripping hot
Add:
1β2 tbsp of your truffle butter
Optional: small splash of beef stock or a little Worcestershire
Optional: cracked black pepper
Put steak in and baste for 30β60 seconds
Spoon the foaming butter over the top
Donβt cook the butter too long or the truffle aroma fades
Finish with:
Flaky salt
Fresh cracked pepper
