Protein-packed broccoli cheddar fritters

Protein-packed broccoli cheddar fritters we made for our 10 month old to try and sneak some broccoli in his diet 😅 

(We ended up eating most of them, they were awesome 🔥)

Ingredients: 

-2 large eggs

-1 head of broccoli

-⅔ cup cottage cheese 

-1 cup grated Cheddar cheese

-½ cup unbleached flour 

-Sea salt and pepper to taste 

-Extra virgin olive oil for cooking

Instructions:

1. Cut head of broccoli into florets and place in boiling water for 3-4 minutes (could also probably do a steamed bag of broccoli) 

2. Strain once cooked and finely chop or place in food mixer

3. In a bowl, add eggs, cottage cheese, cheese, salt, pepper, and broccoli and stir

4. Add in flour and combine

5. Form into patties and cook for 3 minutes on each side
