Grilled chicken sweet potato mango salsa bowls

If you’re not a robot like me and you want something different for lunch every week, check out my wife’s lunch meal prep from last week!

Chicken marinade:

-2lbs chicken breast sliced thin

-2 tbsp Greek yogurt

-1 tbsp extra virgin olive oil

-Zest and juice of a lemon

-1 tbsp paprika

-1/2 tbsp sea salt

-1/2 tbsp garlic powder

-3 minced garlic cloves 

  1. Combine marinade and let sit in fridge for at least 30 minutes.

  2. Sear both sides in a pan for 2-3 minutes each side and then bake in the oven on 400 for 20 minutes or until fully cooked (can also throw chicken on the grill).

Mango salsa:

-2 mangos diced

-A bunch of chopped cilantro

-Juice from a lemon

-Sea salt and pepper

-1/2 chopped red onion

-1 diced red pepper 

-1 avocado cubed
