Ditch the Reese’s this Easter.. try this peanut butter protein eggs instead 👀🐰
Ingredients for the inside:
- 3/4 cup peanut butter
- 1/4 cup pure maple syrup
- 1 tsp vanilla extract
- 1 tsp sea salt
- 3 scoops vanilla protein powder (~1/3 cup)
- 3 tbsp dark chocolate chips
Ingredients for the topping:
- 1 cup dark choc chips
- 2 tbsp coconut oil
- top with flaky salt - we used Watkins sprinkles!
Instructions:
-In a large bowl, add all of the ingredients for the PB base, save the mini chocolate chips for the next step. (measurements listed above). Mix together until you reach a nice consistency. I added a slash of almond milk because it felt a little dry! ***Consistencies do vary so If the mixture is super wet, add more protein powder, if the mixture is super dry, add some almond milk
-Lastly fold in chocolate chips. Form into one giant ball then break off and form into egg shapes
-Pop in the freezer to harden just slightly ~15-20 minutes.
-In a medium sized bowl, add 3/4 cup chocolate chips and 2-3 tbsps of oil of your choosing. Microwave for 30-45 seconds to melt (or longer if needed, just watch closely so it doesn't burn). Mix together until smooth.
- Remove the eggs from the freezer, coat in chocolate and desired toppings
- Pop in the freezer to set fully 2-3 hours
